Ingredients

2 cups all-purpose flour

1 cup pumpkin puree (canned or fresh)

1/4 cup brown sugar

1/4 cup granulated sugar

1/2 teaspoon salt

1 tablespoon pumpkin spice mix

2 teaspoons instant yeast

1/2 cup warm milk (110°F)

1/4 cup unsalted butter, melted

1 large egg

1/2 cup chopped pecans (optional)

For the Maple Glaze:

1 cup powdered sugar

2 tablespoons maple syrup

2-3 tablespoons milk (adjust for consistency)

Instructions

Prepare the Dough: In a large mixing bowl, combine the warm milk, sugar, and yeast. Let it sit for about 5 minutes until foamy.

Mix Ingredients: Add the pumpkin puree, melted butter, egg, flour, salt, and pumpkin spice mix to the yeast mixture. Stir until a rough dough forms.

Knead the Dough: On a floured surface, knead the dough for about 5-7 minutes until it becomes smooth and elastic.

First Rise: Place the dough in a lightly greased bowl, cover with a damp cloth, and let it rise in a warm place for about 1 hour, or until doubled in size.

Roll Out the Dough: After the rise, punch down the dough and roll it out into a rectangle (about 12x18 inches).

Prepare Filling: Optionally, spread a thin layer of softened butter on the dough, then sprinkle with brown sugar, chopped pecans, and a bit more pumpkin spice mix.

Form Rolls: Starting from the long edge, roll the dough tightly into a log. Cut into 12 even pieces.

Second Rise: Place the rolls in a greased baking dish, cover, and let them rise for another 30 minutes.

Bake: Preheat your oven to 350°F (175°C). Bake the rolls for 20-25 minutes, or until golden brown.

Prepare the Glaze: In a small bowl, whisk together powdered sugar, maple syrup, and enough milk to reach pouring consistency.

Glaze the Rolls: Once the rolls have cooled for about 10 minutes, drizzle the maple glaze generously over the top.
