1 ½ pounds pork tenderloin

¼ cup pure maple syrup

¼ cup Dijon mustard

2 tablespoons apple cider vinegar

2 cloves garlic, minced

1 teaspoon fresh rosemary, chopped (or ½ teaspoon dried)

1 teaspoon fresh thyme, chopped (or ½ teaspoon dried)

Salt and black pepper, to taste

2 tablespoons olive oil

Fresh parsley, for garnish (optional)

Instructions
 

Prepare the Marinade: In a mixing bowl, whisk together the maple syrup, Dijon mustard, apple cider vinegar, minced garlic, rosemary, thyme, salt, and pepper until well blended.

    Marinate the Pork: Place the pork tenderloin in a resealable plastic bag or a shallow dish. Pour the marinade over the pork, ensuring it’s fully coated. Seal the bag or cover the dish, and refrigerate for at least 1 hour, preferably overnight for maximum flavor.

      Preheat the Oven: Preheat your oven to 400°F (200°C).

        Sear the Pork: In a large, oven-safe skillet, heat the olive oil over medium-high heat. Remove the pork from the marinade, reserving the marinade for later. Sear the pork in the hot skillet for about 3-4 minutes on each side until browned.

          Bake the Pork: Once the pork is browned, pour the reserved marinade over the tenderloin. Transfer the skillet to the preheated oven and bake for 20-25 minutes, or until the internal temperature reaches 145°F (63°C). Baste the pork with the marinade halfway through the cooking time for more flavor.

            Rest the Meat: Remove the skillet from the oven and let the pork rest for about 5-10 minutes before slicing. This allows the juices to redistribute.

              Serve: Slice the pork tenderloin into medallions and drizzle any remaining glaze from the skillet over the top. Garnish with fresh parsley, if desired.
