In a medium-sized mixing bowl, combine the rolled oats, chopped pecans, cinnamon, chia seeds, and salt. Mix until well combined.
In a separate bowl or measuring jug, stir together the almond milk and maple syrup until blended.
Pour the maple almond milk mixture over the dry ingredients and stir until all the oats are soaked. Ensure the pecans and chia seeds are evenly distributed.
Divide the oat mixture into two jars or airtight containers. Seal the containers and refrigerate overnight (or at least 4 hours).
In the morning, take the oats out of the refrigerator. Stir the mixture to combine, then add a bit more almond milk if desired for a creamier texture.
Top with fresh fruit, additional pecans, and a drizzle of maple syrup if desired before serving.
