2 tablespoons olive oil

1 medium onion, finely chopped

4 cloves garlic, minced

2 large cans (28 oz each) San Marzano tomatoes, crushed

1 teaspoon dried oregano

1 teaspoon dried basil

1 teaspoon sugar (optional, to balance acidity)

Salt and pepper to taste

1 tablespoon red wine vinegar (optional)

Fresh basil leaves for garnish

Instructions
 

In a large saucepan, heat the olive oil over medium heat.

    Add the chopped onion and sauté for about 5 minutes until it becomes translucent.

      Stir in the minced garlic and cook for an additional 1-2 minutes, being careful not to burn it.

        Pour in the crushed San Marzano tomatoes, and stir to combine with the onions and garlic.

          Add the dried oregano, dried basil, sugar (if using), and a pinch of salt and pepper. Stir well.

            Bring the sauce to a gentle simmer, then reduce the heat to low. Cover and let it simmer for at least 30 minutes, stirring occasionally.

              Taste and adjust the seasoning with salt and pepper. If using, add the red wine vinegar for extra acidity and flavor, stirring to combine.

                After simmering, remove from heat and allow it to cool slightly before blending if a smoother sauce is desired (use an immersion blender for convenience).

                  Serve warm, garnished with fresh basil leaves over pasta or pizza.
