Ingredients
  

4 bone-in chicken thighs

2 tablespoons fresh lime juice

2 tablespoons olive oil

1 tablespoon apple cider vinegar

4 cloves garlic, minced

1 teaspoon fresh thyme leaves

1 teaspoon paprika

1 teaspoon cayenne pepper (adjust to your heat preference)

1 teaspoon black pepper

1 teaspoon salt

1/4 cup green bell pepper, finely chopped

1/4 cup red onion, finely chopped

2 green onions, sliced

1 teaspoon dried oregano

Instructions
 

In a large mixing bowl, combine the lime juice, olive oil, apple cider vinegar, minced garlic, thyme, paprika, cayenne pepper, black pepper, and salt. Whisk together until well blended to create a marinade.

    Add the chicken thighs to the marinade, ensuring they are fully coated.

      Add the chopped green bell pepper, red onion, and sliced green onions to the chicken and mix well.

        Cover the bowl with plastic wrap or transfer everything to a resealable plastic bag. Refrigerate for at least 4 hours or overnight for best flavor.

          Preheat your grill to medium-high heat. Remove chicken from the marinade and shake off excess bits; discard the remaining marinade.

            Grill the chicken thighs for about 6-8 minutes on each side until fully cooked (internal temperature should reach 165°F).

              Once cooked, remove the chicken from the grill and let it rest for 5 minutes before serving.
