4 boneless, skinless chicken breasts

1 teaspoon salt

1 teaspoon black pepper

2 tablespoons olive oil

4 cloves garlic, minced

1 cup cherry tomatoes, halved

1 cup heavy cream (or coconut cream for a lighter option)

1 teaspoon dried oregano

1 teaspoon dried basil

1/2 cup grated Parmesan cheese

Fresh basil leaves for garnish

Preheat your oven to 400°F (200°C).

    Season the chicken breasts with salt and pepper on both sides.

      In a large oven-safe skillet, heat the olive oil over medium-high heat. Sear the chicken breasts for about 4-5 minutes on each side until they are golden brown. Remove the chicken from the skillet and set aside.

        In the same skillet, add minced garlic and sauté for 1 minute or until fragrant, being careful not to burn it.

          Add the cherry tomatoes to the skillet, stirring for about 2 minutes until they start to soften.

            Pour in the heavy cream, dried oregano, and dried basil, mixing everything together to create a creamy sauce.

              Sprinkle grated Parmesan cheese into the sauce, stirring until it’s melted and well combined.

                Return the chicken breasts to the skillet, ensuring they are submerged in the sauce.

                  Transfer the skillet to the preheated oven and bake for 20-25 minutes, or until the chicken is cooked through and reaches an internal temperature of 165°F (75°C).

                    Once done, remove from the oven and let it rest for a few minutes before serving.
