Ingredients
  

2 boneless, skinless chicken breasts

Salt and pepper, to taste

1 tablespoon olive oil

3 cloves garlic, minced

1 teaspoon red pepper flakes (adjust to taste)

1 cup cherry tomatoes, halved

1 cup heavy cream

1 cup chicken broth

1 teaspoon Italian seasoning

1 cup grated Parmesan cheese

8 oz fettuccine or penne pasta

Fresh basil, for garnish

Instructions
 

Start by bringing a large pot of salted water to a boil. Cook the pasta according to package instructions until al dente. Drain and set aside.

    While the pasta cooks, season the chicken breasts with salt and pepper on both sides.

      In a large skillet, heat the olive oil over medium-high heat. Add the chicken breasts and sear until golden brown, about 5-7 minutes per side. Remove from the skillet and set aside.

        In the same skillet, add the minced garlic and red pepper flakes. Sauté for about 1 minute or until fragrant.

          Add the halved cherry tomatoes and cook for 3-4 minutes until they start to soften.

            Pour in the heavy cream and chicken broth. Stir in the Italian seasoning and bring the mixture to a simmer.

              Once simmering, slowly whisk in the grated Parmesan cheese until the sauce is creamy and thickened.

                Chop the cooked chicken into bite-sized pieces and return it to the skillet, stirring to coat in the sauce.

                  Add the cooked pasta to the skillet and toss to combine everything evenly.

                    Serve hot, garnished with fresh basil leaves and an extra sprinkle of Parmesan if desired.
