2 chicken breasts, diced

4 cups chicken broth

1 cup carrots, sliced

1 cup celery, diced

1 medium onion, chopped

3 cloves garlic, minced

1 teaspoon dried thyme

1 teaspoon dried rosemary

1 bay leaf

1 cup heavy cream (or coconut cream for a dairy-free option)

Salt and pepper to taste

2 tablespoons olive oil

Fresh parsley, chopped (for garnish)

Instructions
 

In a large pot, heat olive oil over medium heat. Add the diced chicken and season with salt and pepper. Cook until golden brown and cooked through, about 5-7 minutes. Remove the chicken from the pot and set aside.

    In the same pot, add the chopped onion, carrots, and celery. Sauté for about 5 minutes until the vegetables become tender.

      Add minced garlic, dried thyme, dried rosemary, and bay leaf to the pot. Stir and cook for another minute until fragrant.

        Pour in the chicken broth and bring to a simmer. Return the cooked chicken back to the pot. Let it simmer uncovered for about 15 minutes.

          Reduce the heat to low and add the heavy cream, stirring until combined. Simmer for an additional 5 minutes, allowing the soup to thicken slightly. Adjust salt and pepper to taste.

            Remove the bay leaf and discard. Ladle the soup into bowls, garnishing with freshly chopped parsley before serving.
