2 boneless, skinless chicken breasts

Salt and pepper, to taste

2 tablespoons olive oil

3 cloves garlic, minced

1 teaspoon Italian seasoning

1 cup sun-dried tomatoes, chopped

1 cup heavy cream

1 cup chicken broth

1 cup spinach, fresh

1 package (9 oz) tortellini (fresh or frozen)

½ cup grated Parmesan cheese

Fresh basil, for garnish

Prepare Chicken: Season the chicken breasts with salt and pepper on both sides. Heat olive oil in a large skillet over medium heat. Add the chicken and cook for about 5-7 minutes on each side, or until the internal temperature reaches 165°F. Remove the chicken from the skillet and set aside to rest.

    Sauté Aromatics: In the same skillet, add minced garlic and Italian seasoning. Sauté for about 1 minute until fragrant.

      Create Sauce: Stir in the sun-dried tomatoes, and cook for another 2 minutes. Pour in the heavy cream and chicken broth, stirring until combined.

        Cook Tortellini: Bring the sauce to a simmer and add tortellini. Cook according to package instructions until tender, usually around 3-5 minutes for fresh tortellini.

          Add Spinach and Cheese: Once the tortellini is cooked, add the spinach and grated Parmesan cheese to the skillet. Stir until the spinach wilts and the cheese melts into a creamy sauce.

            Slice Chicken: While the sauce is thickening, slice the cooked chicken breasts.
