Ingredients
  

2 boneless, skinless chicken breasts

Salt and pepper, to taste

1 tablespoon olive oil

1 tablespoon butter

3 cloves garlic, minced

1 teaspoon dried thyme

1 teaspoon dried oregano

½ cup chicken broth

1 cup heavy cream

½ cup sun-dried tomatoes, chopped

1 cup spinach, fresh or frozen

½ cup grated Parmesan cheese

8 oz fettuccine or your favorite pasta

Fresh basil for garnish

Instructions
 

Begin by cooking the fettuccine according to package instructions. Drain and set aside.

    Season the chicken breasts with salt and pepper on both sides.

      In a large skillet over medium-high heat, add olive oil and butter. Once hot, add the chicken breasts and sear for about 5-7 minutes on each side until golden brown and cooked through. Remove from the skillet and let rest.

        In the same skillet, add minced garlic and sauté for about 30 seconds until fragrant.

          Stir in dried thyme and oregano, followed by chicken broth. Scrape the bottom of the skillet to deglaze it.

            Pour in the heavy cream and bring it to a gentle simmer. Stir in the sun-dried tomatoes and spinach, cooking until the spinach wilts.

              Add the grated Parmesan cheese and stir until melted and the sauce is creamy.

                Slice the chicken and return it to the skillet with the sauce. Gently combine, allowing the chicken to warm through.

                  Toss the cooked fettuccine into the skillet, making sure it’s well-coated with the sauce.

                    Serve hot, garnished with fresh basil and additional Parmesan if desired.
