Ingredients

4 salmon fillets (6 oz each)

2 tablespoons olive oil

4 cloves garlic, minced

1 teaspoon red pepper flakes

1 cup cherry tomatoes, halved

1/2 cup dry white wine (like Sauvignon Blanc)

1 tablespoon lemon juice

1 teaspoon dried oregano

Salt and pepper to taste

Fresh basil leaves, for garnish

Lemon wedges, for serving

Instructions

Prep the Oven: Preheat your oven to 425°F (220°C) and line a baking sheet with parchment paper.

Sear the Salmon: In a large oven-safe skillet, heat the olive oil over medium-high heat. Season the salmon fillets with salt and pepper. Place the fillets skin-side down in the skillet and sear for about 3-4 minutes, or until the skin is crispy.

Add Flavor: After searing, carefully flip the fillets and add minced garlic, red pepper flakes, and cherry tomatoes to the skillet. Sauté for 1-2 minutes until the garlic is fragrant and the tomatoes start softening.

Deglaze the Pan: Pour in the white wine and lemon juice, scraping the bottom of the skillet to incorporate any flavorful bits. Sprinkle dried oregano over the top.

Bake: Transfer the skillet to the preheated oven and bake for about 10-12 minutes or until the salmon is cooked through and flakes easily with a fork.

Garnish and Serve: Remove from the oven and let it cool slightly. Serve with fresh basil leaves on top and lemon wedges on the side.
