9 oz cheese tortellini

2 tbsp olive oil

1 small onion, diced

3 cloves garlic, minced

1 cup cherry tomatoes, halved

1/2 cup heavy cream

1/4 cup grated Parmesan cheese

1 tsp Italian seasoning

Salt and pepper to taste

Fresh basil leaves, for garnish

1/4 tsp red pepper flakes (optional)

1/2 cup spinach leaves (optional)

Instructions
 

Cook the Tortellini: Bring a large pot of salted water to a boil. Add the cheese tortellini and cook according to package instructions until al dente. Drain and set aside.

    Sauté Aromatics: In a large skillet over medium heat, add the olive oil. Once hot, add the diced onion and sauté until translucent, about 3-4 minutes. Add the minced garlic and continue to sauté for an additional minute until fragrant.

      Add Tomatoes: Stir in the cherry tomatoes and cook for about 5 minutes, until they start breaking down and releasing their juices.

        Make the Sauce: Pour in the heavy cream and add the grated Parmesan cheese, stirring to combine. Bring to a gentle simmer, and season with Italian seasoning, salt, pepper, and red pepper flakes (if using). Allow the sauce to thicken for about 3-4 minutes.
