1 package (9 oz) cheese tortellini

2 tablespoons olive oil

3 cloves garlic, minced

1 cup cherry tomatoes, halved

1 teaspoon red pepper flakes (adjust to taste)

1 cup heavy cream

1 cup fresh spinach, chopped

1/2 cup grated Parmesan cheese

Salt and pepper, to taste

Fresh basil, for garnishing

Optional: 1 teaspoon of lemon juice for added brightness

Cook the Tortellini: In a large pot of salted boiling water, cook the tortellini according to package instructions until al dente. Drain and set aside.

    Sauté Garlic and Tomatoes: In a large skillet over medium heat, add the olive oil. Once hot, add the minced garlic and red pepper flakes, cooking until fragrant (about 30 seconds). Add the halved cherry tomatoes and sauté for 2-3 minutes until they begin to soften.

      Create the Cream Sauce: Reduce the heat to low and carefully pour in the heavy cream, stirring to combine. Let the sauce simmer for about 3 minutes to thicken slightly.

        Add Spinach and Cheese: Stir in the chopped spinach and grated Parmesan cheese. Mix well until the spinach is wilted and the cheese is melted, creating a creamy sauce. Season with salt and pepper to taste. If you prefer a little brightness, stir in the lemon juice at this stage.

          Combine Tortellini and Sauce: Add the cooked tortellini to the skillet and gently toss to coat the pasta with the creamy sauce. Cook for an additional 1-2 minutes on low heat to heat everything through.

            Serve: Plate the Marry Me Tortellini, garnishing with fresh basil. Enjoy immediately!
