Ingredients

For the crust:

1 ½ cups graham cracker crumbs

½ cup unsalted butter, melted

¼ cup granulated sugar

For the cheesecake filling:

16 oz cream cheese, softened

½ cup granulated sugar

1 teaspoon vanilla extract

1 cup heavy whipping cream

For the marshmallow whip:

1 cup mini marshmallows

1 cup heavy whipping cream

2 tablespoons powdered sugar

For garnish:

Extra mini marshmallows

Chocolate shavings or drizzle (optional)

Instructions

Prepare the Crust:

In a medium bowl, combine the graham cracker crumbs, melted butter, and sugar. Mix until the crumbs are evenly coated. Press this mixture firmly into the bottom of a 9-inch springform pan to form an even layer. Bake in a preheated oven at 350°F (175°C) for 10 minutes. Let it cool completely.

      Make the Cheesecake Filling:

In a large mixing bowl, beat the softened cream cheese with granulated sugar and vanilla extract until smooth and creamy. In a separate bowl, whip 1 cup of heavy cream until stiff peaks form. Gently fold the whipped cream into the cream cheese mixture until well combined. Pour this filling over the cooled crust and spread it into an even layer. Refrigerate for at least 4 hours or overnight for best results.

          Prepare the Marshmallow Whip:

In a medium bowl, combine the mini marshmallows with 1 cup of heavy whipping cream and powdered sugar. Whip the mixture until stiff peaks form, creating a fluffy marshmallow whip.

              Assemble the Cheesecake:

Spread the marshmallow whip evenly over the cheesecake layer. Use a spatula to create swirls or peaks for a decorative touch. Optionally, garnish with extra mini marshmallows and chocolate shavings or drizzle.

                  Chill and Serve:

Return the assembled cheesecake to the refrigerator for an additional hour to set before slicing. Remove from the springform pan, slice, and serve. Enjoy the heavenly delight!
