2 large sweet potatoes, peeled and diced

1 tablespoon olive oil

1 teaspoon garlic powder

1 teaspoon onion powder

½ teaspoon smoked paprika

Salt and pepper to taste

½ cup cooked black beans (canned is fine, drained and rinsed)

½ cup corn (fresh, frozen, or canned, drained)

½ cup cherry tomatoes, halved

¼ cup red onion, finely chopped

½ avocado, sliced

2 tablespoons fresh cilantro, chopped

½ lime, juiced

Optional: Greek yogurt or sour cream for topping

Instructions
 

Boil the Sweet Potatoes: In a large pot, bring salted water to a boil. Add the diced sweet potatoes and cook until tender, about 15-20 minutes. You should be able to easily pierce them with a fork.

    Mash the Sweet Potatoes: Drain the sweet potatoes and return them to the pot. Add olive oil, garlic powder, onion powder, smoked paprika, salt, and pepper. Mash until smooth and creamy. Adjust seasoning to taste, if necessary.

      Prepare the Toppings: While the sweet potatoes are cooking, prepare your toppings. In a bowl, combine black beans, corn, cherry tomatoes, red onion, and lime juice. Toss gently to mix.
