4 white fish fillets (cod, halibut, or snapper)

2 tablespoons olive oil

1 lemon, zested and juiced

2 cloves garlic, minced

1 teaspoon dried oregano

1 teaspoon dried thyme

1 teaspoon smoked paprika

Salt and pepper to taste

1 cup cherry tomatoes, halved

1/2 cup Kalamata olives, pitted and halved

1/4 cup fresh parsley, chopped

Lemon wedges for serving

Instructions
 

Preheat your oven to 400°F (200°C).

    In a small bowl, combine olive oil, lemon zest, lemon juice, minced garlic, oregano, thyme, smoked paprika, salt, and pepper. Mix well to form a marinade.

      Place the fish fillets in a baking dish and pour half of the marinade over them, ensuring they are well coated. Let them marinate for 15-20 minutes.

        While the fish is marinating, prepare the vegetable medley. In another bowl, toss together the cherry tomatoes and Kalamata olives with the remaining marinade.

          After marinating, arrange the tomato and olive mixture around the fish fillets in the baking dish.

            Bake in the preheated oven for 20-25 minutes or until the fish is fully cooked and flakes easily with a fork.

              Before serving, sprinkle the chopped parsley over the top for a fresh touch.

                Serve with lemon wedges on the side for an extra burst of flavor.
