Mediterranean Herb and Lemon Baked Branzino

Ingredients
  

2 whole Branzino fish, cleaned and scaled

1 lemon, thinly sliced

3 tablespoons olive oil

3 cloves garlic, minced

1 tablespoon fresh parsley, chopped

1 tablespoon fresh dill, chopped

1 tablespoon fresh basil, chopped

1 teaspoon sea salt

½ teaspoon black pepper

½ teaspoon red pepper flakes (optional)

1 cup cherry tomatoes, halved

1 small red onion, thinly sliced

½ cup kalamata olives, pitted and halved

Fresh lemon wedges for serving

Instructions
 

Preheat Oven: Preheat your oven to 400°F (200°C).

    Prepare the Fish: Rinse the Branzino under cold water and pat dry with paper towels. Make three diagonal cuts on each side of the fish.

      Infuse Oil: In a small bowl, mix olive oil, garlic, parsley, dill, basil, salt, pepper, and red pepper flakes (if using).

        Season the Fish: Rub the herb mixture generously onto the Branzino, ensuring to get it into the cuts and the cavity of the fish for maximum flavor.

          Arrange Ingredients: On a large baking sheet, arrange lemon slices, cherry tomatoes, red onion, and olives. Place the Branzino on top of this bed of vegetables.

            Bake: Bake the Branzino in the preheated oven for 25-30 minutes, or until the fish is cooked through and flakes easily with a fork.

              Serve: Remove from the oven and let it cool for a few minutes. Garnish with extra fresh herbs and serve with lemon wedges on the side.
