Ingredients
  

4 white fish fillets (such as cod, tilapia, or snapper)

2 tablespoons olive oil

1 lemon, juiced and zested

2 cloves garlic, minced

1 teaspoon dried oregano

1 teaspoon paprika

Salt and pepper to taste

1 cup cherry tomatoes, halved

1/2 red onion, thinly sliced

1/2 cup Kalamata olives, pitted and sliced

Fresh parsley, chopped for garnish

Lemon wedges for serving

Instructions
 

Preheat your oven to 400°F (200°C).

    In a small bowl, combine the olive oil, lemon juice, lemon zest, minced garlic, dried oregano, paprika, salt, and pepper. Whisk well to create a marinade.

      Place the fish fillets in a large baking dish and drizzle half of the marinade over them, making sure they're well coated. Let them marinate for about 15 minutes.

        After marinating, arrange the cherry tomatoes, red onion slices, and Kalamata olives around the fish in the baking dish.

          Drizzle the remaining marinade over the vegetables and fish.

            Bake in the preheated oven for 20-25 minutes, or until the fish is cooked through and flakes easily with a fork, and the vegetables are tender.

              Remove from the oven and sprinkle with fresh parsley before serving.
