1 lb ground beef

1 small onion, finely chopped

2 cloves garlic, minced

1 can (10 oz) diced tomatoes with green chilies

2 cups enchilada sauce (store-bought or homemade)

8 corn tortillas

1 cup shredded cheddar cheese

1 cup shredded Monterey Jack cheese

1 tsp cumin

1 tsp chili powder

Salt and pepper to taste

Fresh cilantro, chopped (for garnish)

Optional toppings: sour cream, avocado slices, sliced jalapeños

Instructions
 

Preheat Oven: Preheat your oven to 375°F (190°C).

    Sauté Beef: In a large skillet over medium heat, add ground beef and cook until browned. Drain any excess fat.

      Add Vegetables: Stir in the onion and garlic, cooking until the onions are translucent.

        Add Tomatoes and Spices: Mix in the diced tomatoes, cumin, chili powder, salt, and pepper. Let simmer for about 5 minutes, allowing the flavors to meld.

          Prepare Tortillas: In a separate pan, lightly warm the corn tortillas until pliable (about 10 seconds on each side).

            Fill Tortillas: Take a warmed tortilla, spoon about 2 tablespoons of the beef mixture down the center, top with a sprinkle of cheddar and Monterey Jack cheese, then roll up tightly. Place seam-side down in a greased baking dish. Repeat until all tortillas are filled.

              Top with Sauce: Pour the enchilada sauce evenly over the rolled tortillas and sprinkle the remaining cheese on top.

                Bake: Cover the baking dish with foil and bake in the preheated oven for 20 minutes. Remove the foil and bake for an additional 10-15 minutes, until the cheese is bubbly and golden.

                  Serve: Garnish with fresh chopped cilantro and add optional toppings of your choice such as sour cream, avocado, or jalapeños.
