3 large eggs

1/4 cup diced bell pepper (red and green)

1/4 cup diced onion

1 small jalapeño, deseeded and finely chopped

1/4 cup fresh corn kernels (or canned)

1/4 cup black beans, rinsed and drained

1/4 cup crumbled feta cheese (or cotija cheese)

1/4 cup chopped fresh cilantro

1 tablespoon olive oil

1 teaspoon ground cumin

Salt and pepper to taste

Avocado slices for garnish

Lime wedges for serving

Instructions
 

In a mixing bowl, crack the eggs and whisk them until they are fully combined. Season with salt, pepper, and ground cumin.

    Heat the olive oil in a non-stick skillet over medium heat. Add the diced onion and sauté for about 2 minutes until softened.

      Toss in the diced bell peppers and jalapeño, and continue cooking for another 2-3 minutes until the peppers are slightly tender.

        Stir in the corn and black beans, cooking for an additional 2 minutes until heated through.

          Pour the whisked eggs over the sautéed vegetables, tilting the pan to ensure the eggs cover the entire surface. Cook for about 4-5 minutes, or until the edges start to set.

            Carefully lift the edges of the omelette with a spatula, allowing uncooked eggs to flow underneath. When the center is still a bit soft but not runny, sprinkle the feta cheese and cilantro evenly over one half of the omelette.

              Fold the other half of the omelette over the filled side and cook for another minute, allowing the cheese to melt.

                Carefully slide the omelette onto a plate. Garnish with avocado slices and serve with lime wedges on the side for an added zesty kick.
