2 cups cooked, shredded chicken

1 can (15 oz) white beans, drained and rinsed

1 can (15 oz) corn kernels, drained

2 cups chicken broth

1 cup diced tomatoes (canned is fine)

1 medium onion, diced

2 cloves garlic, minced

1 jalapeño, finely chopped (seeds removed for less heat)

1 teaspoon smoked paprika

1 teaspoon cumin

½ teaspoon chili powder

1 cup half-and-half or heavy cream

¼ cup fresh cilantro, chopped

1 tablespoon olive oil

Salt and pepper to taste

Crumbled cotija cheese for garnish

Lime wedges for serving

Instructions
 

In a large pot, heat olive oil over medium heat. Add the diced onion and sauté for about 3-4 minutes until softened.

    Stir in the minced garlic and chopped jalapeño and cook for an additional 2 minutes until fragrant.

      Add the shredded chicken, white beans, corn, diced tomatoes, and chicken broth to the pot.

        Season the mixture with smoked paprika, cumin, chili powder, salt, and pepper, stirring well to combine.

          Bring the chili to a simmer, then reduce the heat to low and cook for about 20-25 minutes, allowing the flavors to meld.

            Stir in the half-and-half or heavy cream, and let it simmer for an additional 5-10 minutes until heated through. Adjust seasoning as desired.

              Remove from heat and fold in the fresh cilantro.

                To serve, ladle the chili into bowls and garnish with crumbled cotija cheese and a squeeze of fresh lime juice.
