1 tablespoon olive oil

1 medium onion, chopped

2 cloves garlic, minced

2 carrots, diced

2 celery stalks, diced

1 zucchini, diced

1 cup green beans, trimmed and cut into 1-inch pieces

1 can (14 oz) diced tomatoes (with juice)

4 cups vegetable broth

1 can (15 oz) cannellini beans, drained and rinsed

1 cup small pasta (like ditalini or macaroni)

2 cups fresh spinach

1 teaspoon dried oregano

1 teaspoon dried basil

Salt and black pepper to taste

Grated Parmesan cheese (for serving)

Fresh basil leaves (for garnish)

Instructions
 

In a large pot, heat the olive oil over medium heat. Add the chopped onion and sauté until translucent, about 5 minutes.

    Stir in the minced garlic and cook for another minute until fragrant.

      Add the diced carrots and celery to the pot, cooking for 3-4 minutes, until they start to soften.

        Incorporate the zucchini and green beans, stirring frequently for another 3 minutes.

          Pour in the diced tomatoes with their juice and the vegetable broth. Bring the mixture to a boil.

            Once boiling, reduce the heat and let it simmer for 10 minutes.

              Add the cannellini beans, small pasta, dried oregano, and dried basil. Stir well and let it continue to simmer until the pasta is al dente, about 8-10 minutes.

                Just before serving, stir in the fresh spinach, allowing it to wilt for a couple of minutes.

                  Season to taste with salt and black pepper.
