2 large apples (Granny Smith or Honeycrisp), peeled, cored, and diced

1/2 cup brown sugar

1 teaspoon ground cinnamon

1/4 teaspoon nutmeg

1 tablespoon lemon juice

1 tablespoon cornstarch

1 package of pre-made pie crusts (or homemade crust for added flair)

1 egg, beaten (for egg wash)

Optional: Caramel sauce for drizzling

Instructions
 

Preheat oven to 375°F (190°C). Line a muffin tin with paper liners or lightly grease it.

    In a mixing bowl, combine the diced apples, brown sugar, cinnamon, nutmeg, lemon juice, and cornstarch. Stir well until the apples are coated with the mixture. Set aside.

      Roll out the pie crust on a floured surface and cut out circles that are larger than the muffin tin cups (about 4-5 inches in diameter).

        Gently press the dough circles into each muffin tin cup, ensuring they cover the bottom and sides well.

          Fill each pastry shell with the apple mixture, heaping them slightly above the crust.

            Roll out any remaining pie crust and cut out smaller circles or strips to create lattice patterns on top of the pies. Place them over the filled cups.

              Brush the tops of the pies with the beaten egg for a shiny finish.

                Bake in the preheated oven for 20-25 minutes, or until the crust is golden brown and the filling is bubbling.

                  Remove from the oven and allow them to cool for 10 minutes before transferring to a wire rack.
