12 small baby potatoes

2 tablespoons olive oil

1 teaspoon garlic powder

1 teaspoon smoked paprika

Salt and pepper to taste

1 cup sour cream

1 cup shredded cheddar cheese

½ cup chopped green onions

¼ cup crumbled bacon (optional)

Instructions
 

Preheat your oven to 400°F (200°C).

    Wash and scrub the baby potatoes thoroughly to remove any dirt. Pat them dry with a kitchen towel.

      In a large mixing bowl, toss the potatoes with the olive oil, garlic powder, smoked paprika, salt, and pepper until they are evenly coated.

        Place the seasoned potatoes on a baking sheet lined with parchment paper.

          Bake in the preheated oven for 25-30 minutes, or until the potatoes are tender when pierced with a fork and the skins are crispy.

            Remove the potatoes from the oven and allow them to cool slightly.

              Using a sharp knife, slice each potato in half lengthwise and gently scoop out a small portion of the flesh, creating a little pocket for the fillings.

                In a small bowl, combine the scooped potato flesh, sour cream, half of the shredded cheese, and half of the chopped green onions. Stir until well mixed.

                  Spoon the mixture back into each potato half, then top with the remaining shredded cheese and crumbled bacon (if using).

                    Return the stuffed mini potatoes to the oven and bake for an additional 10 minutes, or until the cheese is melted and bubbly.

                      Once done, remove from the oven and garnish with the remaining chopped green onions.
