Ingredients

1 cup crushed graham crackers

1/4 cup granulated sugar

1/3 cup unsalted butter, melted

1 cup heavy whipping cream

1 tablespoon powdered sugar

1 teaspoon vanilla extract

1 large ripe banana, sliced

1 cup vanilla pudding mix

2 cups milk

Whipped cream for topping (store-bought or homemade)

Extra banana slices and chocolate shavings for garnish

Instructions

Prepare the Crust: In a mixing bowl, combine the crushed graham crackers, granulated sugar, and melted butter. Mix until all the crumbs are moistened.

Form the Crusts: Press the graham cracker mixture evenly into the bottom and up the sides of 6 mini tartlet pans. Use the back of a spoon or your fingers to ensure firm and compact crusts.

Bake the Crusts: Preheat the oven to 350°F (175°C). Bake the crusts for about 8-10 minutes or until they are golden brown. Once done, remove from the oven and let them cool.

Prepare the Pudding: In a medium bowl, whisk together the vanilla pudding mix and milk until it thickens, following package instructions. Set aside.

Make the Whipped Cream: In a separate bowl, beat the heavy whipping cream, powdered sugar, and vanilla extract until medium peaks form. This should take about 3-5 minutes with an electric mixer.

Assemble the Pies: Once the crusts are cool, layer the bottom with banana slices. Spoon a layer of pudding over the bananas until they're covered.

Add the Whipped Cream: Top each mini pie generously with the whipped cream. Spread it evenly to cover the pudding layer.

Chill: Place the mini pies in the refrigerator for at least 30 minutes to allow them to set and chill.

Garnish and Serve: Right before serving, add extra banana slices and chocolate shavings on top for an elegant finish.
