2 ripe bananas, mashed

1/3 cup melted coconut oil

1/2 cup brown sugar

1 large egg

1 teaspoon vanilla extract

1 teaspoon baking soda

1/4 teaspoon salt

1 cup all-purpose flour

1/2 teaspoon ground cinnamon

1/4 cup chocolate chips (optional)

1/4 cup chopped walnuts (optional)

Instructions
 

Preheat your oven to 350°F (175°C) and line a mini muffin tin with paper liners or grease it lightly.

    In a large mixing bowl, combine the mashed bananas and melted coconut oil. Stir until well mixed.

      Add the brown sugar and mix until fully incorporated.

        Beat in the egg and vanilla extract until smooth.

          Sprinkle baking soda and salt over the mixture, and stir until combined.

            Gently fold in the all-purpose flour and cinnamon until just combined; be careful not to overmix.

              If using, fold in the chocolate chips and walnuts until evenly distributed.

                Spoon the batter into the mini muffin tin, filling each cup about 2/3 full.

                  Bake in the preheated oven for 10-12 minutes, or until a toothpick inserted into the center comes out clean.

                    Allow the muffins to cool in the tin for 5 minutes, then transfer them to a wire rack to cool completely.
