1 cup Biscoff cookie crumbs

4 tablespoons unsalted butter, melted

1/2 cup cream cheese, softened

1/2 cup powdered sugar

1/2 cup heavy whipping cream

1 teaspoon vanilla extract

1/4 cup Biscoff spread

Additional Biscoff cookies for topping

Prepare the crust: In a mixing bowl, combine the Biscoff cookie crumbs and melted butter. Stir until the mixture resembles wet sand.

    Press the crust: Divide the crumb mixture among 6 mini cheesecake cups or muffin tins lined with cupcake liners. Press the crumbles firmly into the bottom to form an even layer.
