1 cup graham cracker crumbs

3 tablespoons unsalted butter, melted

16 oz cream cheese, softened

½ cup granulated sugar

2 large eggs

1 teaspoon vanilla extract

½ cup heavy whipping cream

2 tablespoons brown sugar (for topping)

Instructions
 

Preheat the oven to 325°F (163°C). Line a muffin tin with cupcake liners.

    In a medium bowl, mix together the graham cracker crumbs and melted butter until the crumbs are evenly coated.

      Press about 1 tablespoon of the crumb mixture into the bottom of each cupcake liner to form a crust. Bake in the preheated oven for 5 minutes, then remove and allow to cool.

        In a large mixing bowl, beat the softened cream cheese with an electric mixer until smooth.

          Gradually add the granulated sugar, mixing until combined.

            Add the eggs one at a time, mixing thoroughly after each addition. Then stir in the vanilla extract and heavy whipping cream until fully combined and smooth.

              Evenly pour the cheesecake mixture over the cooled crusts in the muffin tin.

                Bake for 20-25 minutes, or until the edges are set but the center still has a slight jiggle.

                  Turn off the oven and leave the cheesecakes inside for an additional 30 minutes. This will help prevent cracking.

                    Remove from the oven and let cool at room temperature. Once cooled, refrigerate for at least 4 hours or overnight to set.

                      Before serving, sprinkle a thin layer of brown sugar over the top of each cheesecake.

                        Using a kitchen torch, carefully caramelize the brown sugar until it bubbles and turns golden brown. If you don’t have a torch, place the cheesecakes under a broiler for a few minutes, watching closely to prevent burning.

                          Let the caramelized tops harden for a few minutes before serving.
