Ingredients

1 cup graham cracker crumbs

2 tablespoons unsalted butter, melted

8 oz cream cheese, softened

1/2 cup granulated sugar

1 teaspoon vanilla extract

1 teaspoon almond extract (for a twist)

2 large eggs

1/4 cup heavy cream

1/4 cup brown sugar (for topping)

Instructions

Preheat Oven: Preheat your oven to 325°F (160°C).

Prepare Crust: In a medium bowl, mix the graham cracker crumbs and melted butter until combined. Press the mixture firmly into the bottom of a 12-cup muffin pan to create a crust. Bake for 5-7 minutes until lightly golden, then remove and let cool.

Make Cheesecake Filling: In a large mixing bowl, beat the softened cream cheese and granulated sugar together until smooth and creamy. Add vanilla and almond extracts, blending well.

Incorporate Eggs: Add the eggs one at a time, mixing until fully incorporated. Finally, add the heavy cream and mix until the batter is smooth and fluffy.

Fill Muffin Pan: Pour the cheesecake mixture evenly over the prepared crust in the muffin pan, filling each cup about 2/3 full.

Bake: Bake in the preheated oven for about 20-25 minutes, or until the cheesecakes are set but still slightly jiggly in the center.

Cool: Remove from the oven and let the cheesecakes cool to room temperature. Once cooled, refrigerate for at least 2 hours (or overnight for best results).

Chill and Caramelize: Before serving, sprinkle a thin layer of brown sugar on top of each cheesecake. Use a kitchen torch to carefully caramelize the sugar until it forms a crispy crust. If you don’t have a torch, you can place under a broiler for a minute or two, keeping a close watch to avoid burning.

Serve: Once the sugar has hardened, let the cheesecakes sit for a few minutes before serving for a delightful crack when you tap the crust.

                    Prep Time: 20 mins | Total Time: 3 hrs | Servings: 12

                      - Presentation Tips: Serve the mini cheesecakes on a decorative platter, optionally garnishing each with fresh berries or mint leaves for an extra touch of elegance.
