1 cup graham cracker crumbs

1/4 cup unsweetened cocoa powder

1/4 cup granulated sugar

1/2 cup unsalted butter, melted

2 (8 oz) packages cream cheese, softened

1 cup creamy peanut butter

1 cup powdered sugar

1 teaspoon vanilla extract

2 large eggs

12 mini Reese's Peanut Butter Cups, halved (for topping)

Instructions
 

Preheat the Oven: Preheat your oven to 325°F (160°C) and line a muffin tin with paper liners.

    Make the Crust: In a mixing bowl, combine graham cracker crumbs, cocoa powder, granulated sugar, and melted butter. Mix until well combined. Evenly distribute the crust mixture into the lined muffin tin, pressing it down firmly to form a compact base. Bake for 10 minutes and then allow it to cool while preparing the filling.

      Prepare the Cheesecake Filling: In a large mixing bowl, beat the softened cream cheese and peanut butter with an electric mixer until smooth and creamy. Gradually add in the powdered sugar and vanilla extract, mixing until thoroughly combined.

        Add Eggs: Beat in the eggs one at a time, mixing until just incorporated. Avoid overmixing to keep the cheesecakes light and fluffy.

          Assemble Cheesecakes: Spoon the cheesecake filling over the prepared crusts, filling each liner about 3/4 full. Place a half mini Reese's Peanut Butter Cup on top of each cheesecake.

            Bake: Bake in the preheated oven for 15-18 minutes or until the edges are set and the center has a slight jiggle.

              Cool and Chill: Remove from the oven and let the cheesecakes cool in the pan for about 10 minutes. Transfer to a wire rack to cool completely, then refrigerate for at least 2 hours before serving to firm up.
