2 lbs baby Yukon Gold potatoes, halved

1/4 cup olive oil

1 tablespoon garlic powder

1 tablespoon onion powder

1 teaspoon smoked paprika

1 teaspoon chili powder

1 teaspoon salt

1/2 teaspoon black pepper

1/2 cup sour cream

1 cup shredded cheddar cheese

1/2 cup cooked bacon, crumbled

1/4 cup chopped fresh chives

1/4 cup chopped green onions

Preheat the Oven: Preheat your oven to 400°F (200°C).

    Prepare the Potatoes: In a large mixing bowl, combine the halved baby Yukon Gold potatoes with olive oil, garlic powder, onion powder, smoked paprika, chili powder, salt, and black pepper. Toss until the potatoes are well coated.

      Roast the Potatoes: Spread the seasoned potatoes in a single layer on a baking sheet. Roast in the preheated oven for about 30-35 minutes, or until they are golden brown and tender, tossing halfway through for even cooking.

        Make the Mud Mixture: While the potatoes are roasting, prepare the mud mixture by blending the sour cream, shredded cheddar cheese, and half of the crumbled bacon in a bowl until smooth and creamy.

          Combine and Serve: Once the potatoes are roasted, remove them from the oven and transfer them to a serving dish. Drizzle the creamy mud mixture over the hot potatoes and sprinkle the remaining bacon, chopped chives, and green onions on top.
