12 oz spaghetti, cooked and drained

2 cups rotisserie chicken, shredded

1 cup Monterey Jack cheese, shredded

1 cup cheddar cheese, shredded

1 can (10 oz) diced tomatoes with green chilies

1 cup cream of mushroom soup

1 cup chicken broth

1 small red bell pepper, diced

1 small onion, diced

2 cloves garlic, minced

1 teaspoon chili powder

1 teaspoon cumin

Salt and pepper to taste

Fresh cilantro for garnish (optional)

Instructions
 

Preheat your oven to 350°F (175°C).

    In a large mixing bowl, combine the cooked spaghetti and shredded rotisserie chicken.

      In a separate bowl, mix together the diced tomatoes, cream of mushroom soup, and chicken broth. Stir until well combined.

        Add the diced red bell pepper, onion, garlic, chili powder, cumin, salt, and pepper to the soup mixture, mixing thoroughly.

          Pour the soup mixture over the spaghetti and chicken. Stir to ensure all ingredients are evenly coated.

            Transfer the mixture to a greased 9x13 inch baking dish, spreading it out evenly.

              Top the mixture with shredded Monterey Jack and cheddar cheese, covering it completely.
