Ingredients
  

1 ½ cups warm water (110°F to 115°F)

1 packet (2 ¼ teaspoons) active dry yeast

2 tablespoons granulated sugar

4 cups all-purpose flour

¾ teaspoon salt

½ cup baking soda

1 large egg (for egg wash)

Coarse sea salt (for topping)

8 oz. mozzarella cheese (cut into small cubes)

2 tablespoons unsalted butter (melted)

Optional: Italian seasoning or garlic powder (for extra flavor)

Instructions
 

Prepare the Dough: In a large mixing bowl, combine warm water, yeast, and sugar. Let it sit for about 5 minutes until it becomes frothy. Stir in the flour and salt until a dough forms.

    Knead the Dough: Turn the dough onto a floured surface and knead for about 5-7 minutes until it becomes smooth and elastic. Place it in a lightly greased bowl, cover with a towel, and let it rise in a warm spot for about 1 hour, or until doubled in size.

      Preheat the Oven: Preheat your oven to 450°F (230°C) and line a baking sheet with parchment paper.

        Shape the Pretzels: Punch down the dough and turn it onto a floured surface. Divide the dough into 8 equal pieces. Roll each piece into a rope about 24 inches long. Form a U shape, cross the ends, and twist them together twice before bringing the ends back down to the bottom of the U and pressing to seal.

          Stuff the Pretzels: Take one of the twisted pretzel shapes and carefully open it up to create a pocket in the center. Place a cheese cube inside and pinch the dough together to seal it well. Repeat with the remaining pieces.

            Prepare the Baking Soda Bath: In a large pot, bring about 12 cups of water to a boil and add the baking soda (be careful, as it will bubble up!).

              Boil the Pretzels: Carefully place each pretzel into the boiling water for about 30 seconds, flipping once. Use a slotted spoon to remove them and place on the prepared baking sheet.

                Egg Wash: Beat the egg and brush it over each pretzel. Sprinkle with coarse sea salt (and optional seasoning if desired).

                  Bake: Bake the pretzels in the preheated oven for about 12-15 minutes or until deep golden brown.

                    Coat with Butter: Remove from the oven and brush with melted butter. Serve warm, preferably with marinara sauce or mustard for dipping.
