9 lasagna noodles

2 tablespoons olive oil

1 medium onion, finely chopped

3 cloves garlic, minced

16 oz mushrooms (button and cremini), sliced

1 teaspoon dried thyme

1 teaspoon dried oregano

Salt and pepper to taste

1 cup ricotta cheese

1 large egg

2 cups shredded mozzarella cheese

1 cup grated Parmesan cheese

2 cups marinara sauce

Fresh basil leaves for garnish

Instructions
 

Cook the Noodles: Start by boiling a large pot of salted water. Add the lasagna noodles and cook according to package instructions until al dente. Drain and lay flat on a clean kitchen towel to prevent sticking.

    Sauté the Vegetables: In a large skillet, heat the olive oil over medium heat. Add the chopped onion and sauté until translucent, about 3-4 minutes. Stir in the minced garlic, followed by the sliced mushrooms. Cook until the mushrooms have released their moisture and browned, about 7-10 minutes. Season with thyme, oregano, salt, and pepper. Remove from heat.

      Prepare Cheese Mixture: In a mixing bowl, combine ricotta cheese, egg, half of the mozzarella cheese, and half the Parmesan cheese. Mix well and season lightly with salt and pepper.

        Assemble the Lasagna: Preheat the oven to 375°F (190°C). Spread a thin layer of marinara sauce at the bottom of a 9x13 inch baking dish. Arrange 3 lasagna noodles over the sauce. Spread half of the ricotta mixture over the noodles, then add half of the sautéed mushroom mixture. Pour a quarter of the marinara sauce over this layer, followed by a sprinkle of mozzarella and Parmesan cheese.

          Layer Again: Repeat the layering process: noodles, ricotta, mushrooms, marinara, and cheeses. For the top layer, place the final 3 noodles, cover with the remaining marinara sauce, and top with the rest of the mozzarella and Parmesan cheeses.

            Bake the Lasagna: Cover the baking dish with aluminum foil (to prevent sticking, you can spray the foil with cooking spray). Bake in the preheated oven for 25 minutes. Then, remove the foil and bake for an additional 15 minutes until the cheese is bubbly and golden.

              Let it Rest: Once out of the oven, allow the lasagna to sit for about 10-15 minutes before slicing. This resting time helps the layers set and makes serving easier.

                Garnish and Serve: Serve hot, garnished with fresh basil leaves for added flavor and color.
