8 oz fettuccine or spaghetti

2 tablespoons olive oil

1 medium onion, finely chopped

3 cloves garlic, minced

12 oz mushrooms (cremini or button), sliced

1 teaspoon dried thyme

1/2 teaspoon red pepper flakes (optional)

1 cup heavy cream

1 cup grated Parmesan cheese

Salt and pepper to taste

Fresh parsley, chopped for garnish

Instructions
 

Cook Pasta: Bring a large pot of salted water to a boil. Add the pasta and cook according to package instructions until al dente. Reserve 1 cup of pasta water, then drain and set aside.

    Sauté Vegetables: In a large skillet, heat the olive oil over medium heat. Add the chopped onion and sauté until translucent, about 5 minutes. Stir in the garlic and cook for an additional minute until fragrant.

      Add Mushrooms: Add the sliced mushrooms to the skillet. Cook until they are browned and have released their moisture, about 7-10 minutes.

        Season and Create Sauce: Sprinkle in the dried thyme, red pepper flakes (if using), salt, and pepper. Pour in the heavy cream and stir, allowing it to simmer for 3-4 minutes until slightly thickened.

          Combine Ingredients: Stir in the grated Parmesan cheese and mix until melted and creamy. If the sauce is too thick, add a splash of the reserved pasta water until you reach your desired consistency.

            Mix Pasta and Sauce: Add the cooked pasta to the skillet, tossing it gently in the creamy mushroom sauce until well combined.

              Serve: Plate the mushroom pasta and garnish with fresh parsley. Serve immediately with extra Parmesan on the side if desired.
