500g assorted wild mushrooms (chanterelles, shiitake, and cremini), cleaned and chopped

1 medium onion, finely chopped

3 cloves garlic, minced

4 cups vegetable broth

1 cup coconut milk

2 tablespoons olive oil

1 tablespoon fresh thyme leaves (or 1 teaspoon dried thyme)

Salt and pepper to taste

2 tablespoons fresh parsley, chopped (for garnish)

1 tablespoon lemon juice

Instructions
 

In a large pot, heat the olive oil over medium heat. Add the chopped onions and sauté until translucent, about 5 minutes.

    Stir in the minced garlic and cook for an additional minute until fragrant.

      Add the assorted wild mushrooms to the pot and cook for about 8-10 minutes, until they are softened and browned.

        Sprinkle in the thyme, and season with salt and pepper. Stir well to combine.

          Pour in the vegetable broth, bring the mixture to a gentle boil, then reduce the heat and simmer for 15-20 minutes, allowing the flavors to meld.

            Carefully blend the soup using an immersion blender until smooth, or transfer to a blender in batches if needed.

              Once blended, return the soup to the pot and stir in the coconut milk and lemon juice. Heat through for an additional 5 minutes.

                Adjust seasoning if necessary, adding more salt, pepper, or lemon juice as per your taste.

                  Ladle the soup into bowls and garnish with chopped fresh parsley for a pop of color.
