1 ½ cups graham cracker crumbs

½ cup unsalted butter, melted

1 cup creamy peanut butter

8 oz cream cheese, softened

1 cup powdered sugar

1 tsp vanilla extract

1 cup heavy whipping cream

1 cup semi-sweet chocolate chips

Prepare the Crust: In a mixing bowl, combine the graham cracker crumbs and melted butter. Mix until the crumbs are well coated. Press the mixture firmly into the bottom of a 9x9 inch square baking pan to form an even layer. Refrigerate for 10 minutes to set.

    Make the Peanut Butter Layer: In a large mixing bowl, beat the softened cream cheese until smooth. Add the peanut butter, powdered sugar, and vanilla extract. Mix until well combined and creamy.

      Whip the Cream: In another bowl, whip the heavy cream until stiff peaks form. Gently fold the whipped cream into the peanut butter mixture until incorporated. Be careful to not deflate the whipped cream.

        Assemble the Cheesecake: Spread the peanut butter cheesecake layer evenly over the chilled graham cracker crust. Smooth the top with a spatula and return the pan to the refrigerator for at least 2-3 hours to firm up.

          Prepare the Chocolate Topping: In a microwave-safe bowl, melt the chocolate chips in 30-second intervals, stirring between each interval until completely melted and smooth.

            Drizzle the Chocolate: Once the peanut butter layer is set, pour the melted chocolate over the top, spreading it evenly. Allow it to set for about 15-20 minutes at room temperature, then place back in the refrigerator for another 30 minutes.

              Serve: Once well chilled and set, lift the cheesecake bars out of the pan using the edges of the parchment paper (if used). Cut into squares and serve chilled.
