1 ½ cups graham cracker crumbs

½ cup unsalted butter, melted

⅓ cup granulated sugar

2 ripe bananas, sliced

2 cups vanilla pudding (instant or homemade)

1 cup whipped cream (store-bought or homemade)

1 teaspoon vanilla extract

¼ teaspoon cinnamon

Chocolate shavings or sprinkles for garnish (optional)

Instructions
 

In a medium bowl, combine the graham cracker crumbs, melted butter, and granulated sugar. Mix until the crumbs resemble wet sand.

    Press the crumb mixture evenly into the bottom and up the sides of a muffin tin or mini tart tins to form the pie crusts. Use the back of a spoon or your fingers to create a firm crust.

      Refrigerate the crusts for about 15 minutes to set.

        While the crusts are chilling, prepare the vanilla pudding according to the package directions. If you’re making homemade pudding, be sure it has cooled down before proceeding.

          Once the pudding is ready, gently fold in the whipped cream and vanilla extract to create a light, creamy filling.

            Remove the crusts from the refrigerator and begin layering the mini banana cream pies: place a layer of sliced bananas at the bottom of each crust, followed by a generous spoonful of the vanilla pudding mixture.

              Use the remaining slices of banana for an additional layer on top of the pudding if desired.

                Top each mini pie with more whipped cream and a sprinkle of cinnamon.

                  Garnish with chocolate shavings or sprinkles for an added touch if desired.

                    Refrigerate the mini pies for at least 30 minutes before serving to allow them to firm up slightly.
