Instructions
Prepare the Baking Dish: Line an 8x8 inch baking dish with parchment paper, allowing some overhang on the sides for easy removal.
Mix the Base: In a medium mixing bowl, combine the peanut butter and honey (or maple syrup). Stir until smooth and well combined.
Add Dry Ingredients: To the peanut butter mixture, add the rolled oats, graham cracker crumbs, flaxseed meal (if using), salt, and vanilla extract. Stir until all ingredients are fully incorporated.
Incorporate Chocolate Chips: Gently fold in half of the chocolate chips, reserving the other half for topping.
Press into Dish: Pour the mixture into the prepared baking dish and press it down evenly with a spatula or the back of a spoon.
Add Topping: Sprinkle the reserved chocolate chips on top of the bars, pressing them gently into the mixture.
Chill: Cover the dish with plastic wrap and refrigerate for at least 2 hours to firm up the bars.
Cut and Serve: Once set, lift the bars out of the dish using the overhanging parchment. Cut into squares or rectangles as desired.
Notes
Arrange the bars on a platter, dust with a little cocoa powder, or drizzle additional melted chocolate over the top before serving for a gourmet touch.
