1 cup rolled oats

1 cup all-purpose flour

1/2 teaspoon baking soda

1/2 teaspoon baking powder

1 teaspoon ground cinnamon

1/4 teaspoon salt

1/2 cup unsalted butter, softened

1/2 cup brown sugar, packed

1/4 cup granulated sugar

1 large egg

1 teaspoon vanilla extract

1 cup raisins

1/2 cup chopped walnuts (optional)

Instructions
 

Preheat your oven to 350°F (175°C) and line an 8x8 inch baking dish with parchment paper, leaving some overhang for easy removal.

    In a large mixing bowl, combine the rolled oats, flour, baking soda, baking powder, cinnamon, and salt. Stir until well mixed.

      In another bowl, cream together the softened butter, brown sugar, and granulated sugar until light and fluffy.

        Beat in the egg and vanilla extract to the butter mixture until fully combined.

          Gradually add the dry ingredients to the wet mixture, stirring until just combined.

            Gently fold in the raisins and chopped walnuts, if using.

              Spread the mixture evenly into the prepared baking dish and press down to create a smooth surface.

                Bake in the preheated oven for 25-30 minutes, or until the edges are golden brown and a toothpick inserted in the center comes out clean.

                  Allow the bars to cool in the pan for about 10 minutes, then lift them out using the parchment overhang to cool completely on a wire rack before cutting into squares.
