2 cups all-purpose flour

1 tablespoon baking powder

1 teaspoon baking soda

1 teaspoon salt

1/4 cup unsalted butter, cold and cubed

3/4 cup buttermilk, chilled

1 tablespoon honey (optional)

Instructions
 

Preheat your oven to 425°F (220°C). Line a baking sheet with parchment paper.

    In a large mixing bowl, sift together the flour, baking powder, baking soda, and salt. This will ensure your biscuits rise properly.

      Add the cold, cubed butter into the flour mixture. Using a pastry cutter or your fingers, cut the butter into the flour until it resembles coarse crumbs.

        Create a well in the center of the dry ingredients and pour in the chilled buttermilk and honey (if using). Gently mix until just combined. Be careful not to over-mix; the dough should be slightly sticky but workable.

          Turn the dough out onto a floured surface and gently knead it 3-4 times, just until it holds together. Pat the dough into a rectangle about 1 inch thick.

            Cut the biscuits using a round cutter or a glass, pressing straight down without twisting for the best rise.

              Place the biscuits on the prepared baking sheet, leaving some space between each.

                Bake in the preheated oven for 12-15 minutes or until the tops are golden brown.

                  Remove from the oven and allow to cool slightly before serving. Enjoy them warm with butter or jam!
