3 to 4 pounds beef chuck roast

2 tablespoons vegetable oil

Salt and pepper, to taste

4 cloves garlic, minced

1 large onion, chopped

4 medium carrots, peeled and cut into chunks

3 stalks celery, chopped

4 medium potatoes, peeled and cut into quarters

2 cups beef broth

1 cup red wine (optional)

2 tablespoons Worcestershire sauce

1 teaspoon dried thyme

1 teaspoon dried rosemary

2 bay leaves

Instructions
 

Preheat and Prepare: Preheat your oven to 325°F (160°C). Season the beef roast generously with salt and pepper on all sides.

    Sear the Meat: In a large Dutch oven or heavy-bottomed pot, heat vegetable oil over medium-high heat. Once hot, add the beef roast and sear for 4-5 minutes on each side until browned. Remove the roast and set aside.

      Sauté the Aromatics: In the same pot, add the onions and garlic. Sauté for about 2-3 minutes until softened and fragrant.

        Add Vegetables: Stir in the carrots, celery, and potatoes. Cook for another 5 minutes to slightly caramelize the vegetables.

          Deglaze the Pot: If using wine, pour it into the pot to deglaze, scraping up any browned bits from the bottom. Let it simmer for about 2 minutes before adding the beef broth and Worcestershire sauce.

            Season and Combine: Return the beef roast to the pot. Add thyme, rosemary, bay leaves, and enough beef broth to cover the roast halfway.

              Slow Cook: Cover the pot and transfer it to the preheated oven. Cook for 3 to 4 hours or until the meat is tender and easily shreds apart with a fork.

                Rest and Serve: Once done, remove the pot from the oven and let it rest for about 15 minutes before slicing the roast. Serve with the cooked vegetables and spoon some of the pot juices over the top.
