2 ribeye steaks (about 1 inch thick)

Salt and freshly ground black pepper, to taste

2 tablespoons olive oil

1 cup heavy cream

4 oz Gorgonzola cheese, crumbled

2 tablespoons fresh parsley, chopped

1 teaspoon fresh rosemary, chopped

1 teaspoon garlic powder

1 tablespoon balsamic glaze (optional for drizzling)

Prepare the Steaks: Take the steaks out of the refrigerator and let them sit at room temperature for about 30 minutes. Season both sides generously with salt, pepper, and garlic powder.

    Cook the Steaks: In a large skillet over medium-high heat, add the olive oil. Once hot, place the steaks in the skillet and cook for about 4-5 minutes on each side for medium-rare, or until desired doneness is achieved. Remove from the skillet and let rest for 5 minutes.

      Make the Gorgonzola Sauce: In the same skillet, reduce the heat to medium. Pour the heavy cream into the skillet, scraping up any brown bits from the bottom. Bring to a gentle simmer.

        Add Cheese and Herbs: Whisk in the crumbled Gorgonzola cheese, chopped parsley, and rosemary. Allow the sauce to simmer gently for about 3-5 minutes, stirring frequently until it thickens slightly.
