4 boneless, skinless chicken thighs

2 medium sweet potatoes, peeled and diced

1 red bell pepper, sliced

1 yellow onion, diced

3 cloves garlic, minced

2 tablespoons olive oil

1 teaspoon smoked paprika

1 teaspoon ground cumin

1/2 teaspoon chili powder

Salt and pepper to taste

2 cups fresh spinach

Fresh parsley, chopped (for garnish)

Lemon wedges (for serving)

Instructions
 

Prepare the Chicken: Season the chicken thighs with smoked paprika, cumin, chili powder, salt, and pepper on both sides.

    Sauté the Veggies: Heat olive oil in a large skillet over medium heat. Add the diced sweet potatoes and cook for about 5-7 minutes until they begin to soften. Stir occasionally.
