4 boneless, skinless chicken thighs

2 tablespoons olive oil

Salt and pepper to taste

1 teaspoon garlic powder

1 teaspoon Italian seasoning

8 ounces egg noodles

3 cups chicken broth

3 tablespoons unsalted butter

1 cup cherry tomatoes, halved

1 cup fresh spinach

1/4 cup grated Parmesan cheese

Fresh parsley, chopped (for garnish)

Instructions
 

Season the Chicken: Pat the chicken thighs dry with paper towels and season both sides with salt, pepper, garlic powder, and Italian seasoning.

    Sear the Chicken: In a large skillet (preferably oven-safe), heat olive oil over medium-high heat. Once hot, add the chicken thighs and cook for about 5-6 minutes on each side until golden brown. Remove the chicken from the skillet and set aside.

      Cook the Noodles: In the same skillet, add the chicken broth and bring to a boil. Stir in the egg noodles and cook according to package instructions until tender, typically around 7-10 minutes.

        Combine Ingredients: Reduce the heat to low and add the butter, cherry tomatoes, and fresh spinach to the skillet with the noodles. Stir until the butter melts and the spinach wilts.

          Add Chicken Back: Nestle the seared chicken thighs back into the skillet with the noodles and vegetables, spooning some of the broth over the chicken.

            Finish Cooking: Cover the skillet and let it simmer for an additional 5 minutes to allow the flavors to meld and ensure the chicken is cooked through (internal temperature should reach 165°F).

              Serve: Remove from heat, sprinkle with Parmesan cheese, and garnish with fresh parsley. Serve warm, ensuring each plate gets a generous serving of noodles, chicken, and veggies.
