4 boneless, skinless chicken thighs

2 tablespoons olive oil

Salt and pepper to taste

1 teaspoon garlic powder

1 teaspoon onion powder

1 cup chicken broth

8 ounces wide egg noodles

3 tablespoons unsalted butter

1 cup fresh spinach

1/2 cup grated Parmesan cheese

Fresh parsley, chopped (for garnish)

Instructions
 

In a large skillet, heat the olive oil over medium-high heat. Season both sides of the chicken thighs with salt, pepper, garlic powder, and onion powder.

    Once the oil is hot, add the chicken thighs to the skillet. Sear them for about 5-6 minutes on each side until golden brown and cooked through. Remove the chicken from the skillet and set aside.

      In the same skillet, add the chicken broth and bring to a simmer. Scrape the bottom of the pan with a wooden spoon to incorporate the browned bits.

        Add the egg noodles to the broth and cook according to package instructions, usually around 6-8 minutes, stirring occasionally until the noodles are tender and have absorbed some liquid.

          Once the noodles are cooked, reduce the heat to low and stir in the butter until melted. Add the fresh spinach and cook for an additional 2 minutes until wilted.

            Return the cooked chicken to the skillet, nestling it amongst the noodles. Sprinkle the grated Parmesan cheese over the top, then cover the skillet for 2-3 minutes to allow the cheese to melt.

              Taste and adjust seasoning if necessary. Garnish with chopped parsley before serving.
