4 bone-in, skin-on chicken thighs

4 medium Yukon gold potatoes, halved

4 tablespoons unsalted butter, melted

4 cloves garlic, minced

1 teaspoon Italian seasoning

1 teaspoon paprika

1/2 cup grated Parmesan cheese

1 tablespoon fresh parsley, chopped (for garnish)

Salt and pepper to taste

Preheat your oven to 400°F (200°C).

    In a large mixing bowl, combine the melted butter, minced garlic, Italian seasoning, paprika, salt, and pepper.

      Add the halved potatoes to the bowl and toss them in the garlic mixture until they are well coated.

        Arrange the potatoes in the center of a large, rimmed baking sheet or oven-safe skillet.

          Pat the chicken thighs dry with paper towels, then season both sides generously with salt and pepper.

            Place the chicken thighs on top of the potatoes, skin side up. Brush remaining garlic butter mixture over the chicken thighs.

              Sprinkle the grated Parmesan cheese evenly over the chicken and potatoes.

                Roast in the preheated oven for 35-40 minutes, or until the chicken is cooked through (internal temperature of 165°F/74°C) and crispy on top, and the potatoes are tender.

                  Remove from the oven and let it rest for 5 minutes. Garnish with fresh parsley before serving.
