1 cup orzo pasta

1 lb large shrimp, peeled and deveined

4 cups low-sodium chicken broth

1 cup grated Parmesan cheese

2 tablespoons olive oil

1 small onion, diced

1 cup cherry tomatoes, halved

2 cups baby spinach

1 teaspoon Italian seasoning

Salt and pepper to taste

Sauté the Aromatics: In a large skillet or saucepan over medium heat, add the olive oil. Once hot, add the diced onion and minced garlic. Sauté for 3-4 minutes until the onion is translucent and fragrant.

    Toast the Orzo: Add the uncooked orzo to the skillet and stir gently, toasting it for about 2-3 minutes. This will enhance its nutty flavor.
