12 oz penne pasta

1 lb Italian sausage (mild or spicy, your choice)

1 medium onion, diced

3 cloves garlic, minced

1 bell pepper (any color), diced

1 can (14.5 oz) diced tomatoes, undrained

4 cups chicken broth

1 teaspoon Italian seasoning

1 teaspoon paprika

Salt and pepper, to taste

1 cup heavy cream

1.5 cups shredded mozzarella cheese

Fresh basil, for garnish (optional)

Instructions
 

Sauté the Sausage: In a large pot or Dutch oven over medium heat, add the Italian sausage. Break it up with a spoon and cook until browned and cooked through, about 5-7 minutes. Remove the sausage from the pot and set aside, leaving some drippings.

    Sauté Vegetables: In the same pot, add the diced onion and bell pepper. Sauté for about 3-4 minutes until the vegetables are softened. Add the minced garlic and cook for an additional 1 minute until fragrant.

      Combine Ingredients: Add the uncooked penne pasta, diced tomatoes (with juice), chicken broth, Italian seasoning, paprika, and the reserved cooked sausage back into the pot. Stir well to combine.

        Cook the Pasta: Bring the mixture to a boil. Once boiling, reduce the heat to low, cover the pot, and let it simmer for about 12-15 minutes, or until the pasta is al dente and most of the liquid is absorbed. Stir occasionally to prevent sticking.

          Add Cream and Cheese: Once the pasta is cooked, stir in the heavy cream and half of the shredded mozzarella cheese. Mix until the cheese is melted and the pasta is creamy. Taste and adjust seasoning with salt and pepper if needed.

            Serve: Remove the pot from the heat and sprinkle the remaining mozzarella cheese on top. If desired, place the pot under the broiler for 2-3 minutes until the cheese is bubbly and golden. Garnish with fresh basil before serving.
