Ingredients
  

12 oz (340g) fettuccine or pasta of your choice

2 tablespoons olive oil

1 medium onion, finely chopped

3 cloves garlic, minced

8 oz (225g) cremini mushrooms, sliced

1 teaspoon dried thyme

1 teaspoon dried oregano

4 cups vegetable broth

1 cup heavy cream

1 cup grated Parmesan cheese

Salt and black pepper to taste

Fresh parsley, chopped (for garnish)

Sauté Aromatics: In a large pot over medium heat, add the olive oil. Once heated, add the chopped onion and sauté for about 3-4 minutes until softened. Stir in the minced garlic and cook for an additional 1 minute until fragrant.

    Cook Mushrooms: Add the sliced cremini mushrooms to the pot. Sauté for about 5-7 minutes, until the mushrooms are browned and have released their moisture. Stir in the dried thyme and oregano.

      Combine Pasta and Broth: Pour in the vegetable broth and bring to a gentle boil. Once boiling, add the pasta, ensuring it is submerged in the liquid. Reduce heat to low and cover the pot. Cook for 10-12 minutes, stirring occasionally until the pasta is al dente and most of the liquid has been absorbed.

        Make it Creamy: Stir in the heavy cream and grated Parmesan cheese. Mix well until the cheese is melted and the sauce is creamy. Season with salt and black pepper to taste. If desired, add a bit more broth or cream to reach your desired consistency.

          Serve: Remove from heat and let rest for a couple of minutes. Serve the pasta in bowls, garnished with freshly chopped parsley and additional Parmesan cheese if desired.
